You’ll learn how to build dishes that combine heat, sweetness, umami and texture: from the vibrant bibimbap rice bowl to the satisfying chew of japche-cha noodles, the hand-filled mandoo dumplings, and the essential dipping sauce and quick kimchi that bring everything together.

Under the guidance of our chef tutor you’ll discover authentic seasoning techniques, key ingredients such as gochujang and soy based sauces, and how to assemble each dish for maximum flavour and visual appeal.

What you will learn

  • How to prepare and cook a perfectly seasoned beef for bibimbap, and assemble the bowl with pickles, vegetables, egg and gochujang.
  • The technique for stir-frying glass noodles (dangmyeon) with mushrooms, vegetables and the proper Korean savoury-sweet sauce to create japche-cha.
  • How to make the wrapper, filling and fold the dumplings (mandoo), plus cooking methods (steaming, pan-frying) as appropriate.
  • How to make Cho Ganjang — a Korean-style dipping sauce combining soy, sugar, chilli and acidity — and understand how such sauces elevate a dish.
  • The quick-kimchi process: pickling cabbage with chilli, garlic and seasoning to create a vibrant, fresh side you can make at home.
  • How to select and use essential Korean pantry items, and how to adapt the techniques for vegetarian or vegan alternatives.

Lunch

You will enjoy a sit-down lunch with wine featuring some of the dishes you have prepared during the day.

Take Home

You will be able to take away the additional items you make in the afternoon to enjoy at home. Recyclable containers are provided but please bring your own if you can to reduce recycling.
