Slow-Cooked Devon Beef & Ale Casserole
Nothing says autumn comfort quite like a slow-cooked casserole. This Devon-inspired dish brings together tender beef shin, local ale, and root vegetables for a rich, warming supper that’s perfect after a cold walk.
Ingredients
Serves 4
- 800g diced beef shin
- 2 tbsp plain flour
- 2 onions, sliced
- 2 carrots, chopped
- 200g swede, diced
- 2 garlic cloves, crushed
- 500ml local dark ale (Dartmoor Jail Ale)
- 300ml beef stock
- 2 tbsp tomato purée
- 2 bay leaves, thyme, salt, pepper
Method
- Dust beef with flour and brown in a heavy casserole dish.
- Remove and soften onions, carrots, swede, and garlic.
- Add ale, stock, tomato purée, and herbs.
- Return beef, cover, and cook at 160°C for 2½ hours until tender.
- Serve with buttered kale or horseradish mash.
