Spiced Butternut & Apple Soup
This smooth, golden soup captures the flavours of the season. Roasted squash and tart apple create a natural sweetness lifted by gentle spice — ideal for a light lunch or elegant starter.
Ingredients
Serves 4
- 1 butternut squash, peeled and diced
- 2 apples, peeled and chopped
- 1 onion, sliced
- 1 tsp ground cumin
- 800ml vegetable stock
- 50ml cream, nutmeg, salt
Method
- Sauté onion and cumin until soft.
- Add squash, apple, and stock.
- Simmer for 25 minutes until soft.
- Blend smooth with a stick blender.
- Season, and finish with cream and nutmeg.
